I’ve been pretty bad about making breakfast recently. Junior got tired of what I was making and started complaining, so I told him he could eat cold cereal this past week. Muesli is definitely a favorite breakfast item in our house. It has gone from a long, overnight process to a quick stir of a few ingredients. However, it all tastes just about the same, either way. This is the short process recipe and is very easy to make. It is full of protein and enzymes from the yogurt, so it is very healthy for you!
Last night, my parents went out for a date night. Not that it was too exciting; they were going to the financial planner. BOR-ING! However, they did go out to dinner afterwards; to our favorite French bistro.
Whenever they go out, I cook dinner for Junior and myself. It used to be boxed mac’n’cheese (I KNOW, don’t tell!) but I really prefer homemade. I have made homemade mac’n’cheese twice before, but this time I decided to make up my own recipe. And if that sounds frightening, just think of it as being scientific. But how can you go wrong with mac’n’cheese? If it’s too thick, add more cream. If it’s too thin, add more cheese. Always more cheese. 😉
