The Anne of Green Gables series has always been a favorite of mine. When my besties and I decided to go on a picnic at the local arboretum, I knew that we must have a chocolate cake. In the beginning of Anne of Ingleside, Anne, now a mother of five children, is back in Avonlea where she was raised, and she and her “bosom friend” Diana go on a “do-you-remember” picnic to reminiscence old times. Anne bakes a chocolate cake…and so that is where the idea of a chocolate cake on our picnic came from.
“‘How nice things taste out of doors!’ sighed Diana comfortably. ‘That chocolate cake of yours, Anne…well, words fail me, but I must get the recipe. Fred would adore it. He can eat anything and stay thin. I’m always saying I’m not going to eat any more cake…becuase I’m getting fatter every year. I’ve such a horror of getting like great-aunt Sarah…she was so fat she always had to be pulled up when she sat down. But when I see a cake like that…and last night at the reception…well, they would all have been so offended if I didn’t eat.'”
Poor Diana…she certainly couldn’t avoid a good cake. This one lives up to her standards for sure! The recipe is that classic Hershey’s chocolate cake recipe, but I added raspberry jam between the layers of cake. I frosted it all with a chocolate buttercream icing.
Chocolate is not something I enjoy all that often, but when I do have a chocolate cake or something, I just revel in it. It’s such a comfort food, y’know?
