I have a rather interesting family background. My father is Canadian, and my mom is part English, part German with Hungarian, Scottish, and a bunch of other stuff thrown in. Mostly just English and German. There’s one thing that we carry from the German side, and that’s the food. Our favorite dish is kaese spaetzle – sort of like the German form of macaroni and cheese. It starts with a homemade noodle.
Our noodles have a very interesting component to them – nutmeg. Combined with flour, eggs, salt, and water, our noodles are completed. We push them through a spaetzle maker and they cook in boiling water.
The dish is nearly completed. All we have left to do is sauté some onions, shred some Jarlsburg Swiss cheese, and layer the three ingredients in a baking dish. We bake it until the cheese is melty and bubbly, and our dish is complete.
