Creamy Stovetop Macaroni and Cheese


Last night, my parents went out for a date night. Not that it was too exciting; they were going to the financial planner. BOR-ING! However, they did go out to dinner afterwards; to our favorite French bistro.

Whenever they go out, I cook dinner for Junior and myself. It used to be boxed mac’n’cheese (I KNOW, don’t tell!) but I really prefer homemade. I have made homemade mac’n’cheese twice before, but this time I decided to make up my own recipe. And if that sounds frightening, just think of it as being scientific. But how can you go wrong with mac’n’cheese? If it’s too thick, add more cream. If it’s too thin, add more cheese. Always more cheese. 😉

I started out by making a white sauce. I melted a stick of butter and added in some flour, whisking, then I added some whole milk. After that I put in A LOT of cheddar cheese, added my cooked pasta, and then topped it with some Parmesan cheese. It was really, really good! I had only made my own recipe for something once before, so I am encouraged by my success.

Unfortunately I only have a picture of the finished dish because I was running late on dinner and was basically racing through making it. Didn’t have time to take pictures! (Besides, my iPhone was plugged into the intercom system playing Lindsey Stirling.)
