Easy Lemon Pie

I love lemons. Tart and fresh, they provide the perfect summer flavor. And fall, and winter, and spring….well, lemons are great year-round! This is a famous recipe by my Aunt Kat. She makes it every time the family gets together – and now I know how to make it too! I decided to share it with you because sometimes…good recipes have to be shared.

Ingredients:

1 Pre-baked pie crust

1 ¼ cups granulated sugar

5 TBSP’s cornstarch

1 cup milk

½ cup cold water

1/8 tsp salt

6 large egg yolks

2/3 cup fresh lemon juice

2 TBSP’s lemon zest

2 TBSP’s butter, cut into pieces

Directions:

Bake your pie crust.

Combine granulated sugar, milk, water, cornstarch and a pinch of salt in a large, non-reactive saucepan. Whisk to combine, then bring to a simmer, whisking occasionally. As the mixture reaches a simmer, and begins to thicken and turn clear (4-5 min) whisk in egg yolks, 1 at a time. Slowly add lemon juice, then zest, then butter, 1 piece at a time. Whisk constantly, and return to a simmer. Remove from heat and pour immediately into prepared pie crust. After it has cooled and set, top it with whipped cream. Enjoy!
